I need to ferment alcohol to make an alcoholic drink as a science project. But what drink is easy to do?

Wine is more forgiving of mistakes than beer is. although sanitation is important with wine too. Mead would be in the same category but takes too long to become worth drinking. Cider and beer are too easy to contaminate.
Save the water from boiling potatoes, treat it with amylase, and make potato wine.
beer is an easy one
beer would only be easy if you have hops if not you have to get some.
