I am looking for a good pate recipe, but all of them call for bourbon or wine. I know alcohol is usually burned off during cooking, but I would rather not use any at all. What are some good non-alcoholic substitutes?

Try vegetable broth or chicken broth(low sodium/fat free kind)

    Bourbon can have a smoky and slightly sweet flavor apart from the alcohol, which gives it aromatic properties. I would suggest grinding and toasting some black comino seed (to release the aromatic oils; black comino seed is smoky not spicy), then dissolve about 1/4 teaspoon in 1 teaspoon of white grape juice or apple juice to equal 1 teaspoon of Bourbon or Cognac.

    For wine, straight grape juice will likely is too sweet. Try some sparkling grape juice (has CO2 added, is non-alcoholic) that you let go flat (leave the top off or loose so the CO2 escapes into the air) OR dilute grape juice with an equal part of water.
